Definition
Digestion and absorption (SACE Stage 2 Nutrition)
Define Enzyme
A protein that speeds up a specific chemical reaction without being used up. Digestive enzymes are specific to one type of nutrient, which is why several different enzymes are needed.
Definition
Cardiovascular disease and diet (SACE Stage 2 Nutrition)
Define Cardiovascular disease (CVD)
Cardiovascular disease (CVD) is a group of conditions affecting the heart and blood vessels, including coronary heart disease and stroke. Its main underlying process is atherosclerosis.
Definition
Global food and nutrition issues (SACE Stage 2 Nutrition)
Define Undernutrition
Undernutrition occurs when people do not get enough energy or nutrients. It includes chronic hunger, stunting (impaired growth in children) and micronutrient deficiencies such as iron, vitamin A and iodine deficiency, sometimes called hidden hunger because it is not always visible.
Definition
Food processing and technologies (SACE Stage 2 Nutrition)
Define Heating
Heating (pasteurisation, canning, cooking) kills microbes and deactivates enzymes. Very high heat can destroy heat-sensitive vitamins such as vitamin C.
Definition
Energy metabolism and BMR (SACE Stage 2 Nutrition)
Define Basal metabolic rate (BMR)
Basal metabolic rate (BMR) is the rate at which the body uses energy at complete rest, simply to stay alive. This energy keeps the heart beating, lungs breathing, brain working, body temperature stable and cells maintained. For most people, BMR is the largest single part of daily energy use, often more than half.
Definition
Diet-related diseases (SACE Stage 2 Nutrition)
Define Obesity
Obesity is excess body fat that harms health, resulting from a sustained positive energy balance where energy in exceeds energy out. Energy-dense foods high in fat and sugar, large portions and sugary drinks all contribute. Obesity is itself a risk factor for CVD, type 2 diabetes and some cancers, so it links many diet-related diseases together.
Definition
Aboriginal and Torres Strait Islander food and nutrition (SACE Stage 2 Nutrition)
Define Cost and income
Lower average incomes and higher food prices in remote areas make a healthy diet harder to afford, a clear example of how economics shapes food choice.
Definition
Food production and supply (SACE Stage 2 Nutrition)
Define Quality
Quality is affected by how food is grown, then by how well it is handled, stored and transported before it reaches the consumer.
Definition
Enzymes and chemical digestion (SACE Stage 2 Nutrition)
Define Carbohydrases (amylases)
Salivary amylase, made in the mouth, starts breaking starch into the disaccharide maltose. Pancreatic amylase continues this in the small intestine. Other enzymes such as maltase and sucrase then split disaccharides into single sugars (monosaccharides) ready for absorption.
Definition
Dietary guidelines and healthy eating (SACE Stage 2 Nutrition)
Define Australian Guide to Healthy Eating
Australian Guide to Healthy Eating is shown as a plate divided into segments sized to show how much of each food group a balanced diet should contain. Vegetables and grains take the largest segments, while the discretionary foods sit outside the plate.
